From adding creaminess to curries to thickening puddings and pies, canned coconut milk brings the heft, body, and indulgence to the party, making it the ideal ingredient to be spun into a stiff, sweet whipped cream — no fancy additions or techniques needed. Start by chilling a can in the fridge for eight hours or overnight — and don’t skip this step, as the refrigeration is key to achieve a frothy, thick texture.
Once coconut milk is super chilled, carefully separate out the congealed, nearly solid portion from the liquid — that’s the only portion you’ll be using, so you can set aside the liquid or freeze it for later use. With an electric mixer, whisk the thick coconut milk plus any added ingredients like sugar and vanilla (delicious but not required) until it reaches a stiff, perfectly whipped consistency. Pick up a full-fat shelf stable canned variety — often found in the ethnic or Asian food sections of the grocery store. Definitely avoid the type in a carton or box, which can contain all sorts of other add ins that can’t get in the way of the perfect shipped texture.
With the right type of milk, a cold enough can, and enough minutes spent whipping it all up, you can expect a texture pretty identical to that of dairy whipped cream — just don’t expect an exact dupe in terms of flavor. Unsurprisingly, anything with coconut milk as the main ingredient will have a decidedly coconut-y flavor (though this can be diluted a bit with additions like vanilla, sugar, and even cocoa powder). Though the taste won’t be as neutral as a traditional dairy version, this makes a delightful topping for everything from homemade lattes and coffee drinks to a slice of holiday pie or for topping a delicious strawberry shortcake.
